Strawberry Rhubarb Cobbler

This is fabulous. Quick and easy too. Strawberries and rhubarb are wonderful
together...
Preheat oven to 350 degrees
2 oz. (1/2 stick) butter
1 cup unbleached all-purpose flour
3/4 cup granulated sugar, plus 1-2 tablespoons for sprinkling
2 teaspoons baking powder
1 cup buttermilk
2 teaspoons pure vanilla extract
2 cup mix of sliced strawberries and rhubarb
Melt the butter allowing it to brown a bit. Pour into a 6-8 cup capacity
baking dish. In another bowl, sift together the flour, sugar, and baking
powder. Pour in the buttermilk and vanilla and whisk until just smooth.
Pour batter over the butter in the baking dish and then scatter the fruit
over the batter. Sprinkle with the remaining sugar. Bake for approximately
45-50 minutes until golden brown and crisp around the edges. Serve with
lightly whipped cream. Enjoy!
